I bought a new slow cooker which was defective.  I left all the ingredients for beef stew in it for 9 hours at cool room temperature (64 degrees ish.)  I then refrigerated the crock over night and cooked it in a traditional oven the next day.  Is it safe to eat? (Meat was seared before putting in crock pot.)

Thanks for your question, Jim.
The beef stew may not be safe to eat. The reason I say this is because there are certain types of bacterial toxins that can be produced AND which will not be destroyed by cooking the stew in the oven. The only way to know for sure would involve laboratory tested, which is expensive.
Bacillus cereus is the primary pathogen of concern. If you want to learn more about it, see this article in FDA’s Bad Bug Book.
Thanks again
Mark
