Allergens

Food allergies are caused when our body sees a certain type of food as being foreign. When this happens, it can trigger an allergic response.

Allergic response can be mild to severe – even leading to death is severe anaphylactic responses, without proper medical care.

Food intolerance is not the same as food allergies. The symptoms of food intolerance normally come-on gradually and are rarely life-threatening. Rather than being related to an immune response, intolerance happens when our bodies do not adequately absorb a food compound or when our bodies lack a specific compound (e.g. enzyme) to break it down. A common example is lactose intolerance.
