is the shelf life of rice only 12 hr ? what about the aflatoxin in cooked rice ?

Potentially hazardous foods, including cooked rice, can be held below 40F or above 140F for extended periods of time. However, they can only be held for 4 hours between 40F and 140F.
Aflatoxin, a toxin produced by fungi, can occur in rice if it is not properly handled after harvest. Food companies that produce rice must follow strict guidelines to minimize the presence of harmful levels of aflatoxin.
