At work our freezer and cooler are malfunctioning. What is the parameters for the temperature excursion that we should throw away the dairy and freezer items? Unsure of how long they have been at this temperature the store just opened so first shift found it.

Hi, Krista
First, my sincere apologies for a delayed response. There was a glitch in the software that should have notified me that a question had been submitted.
If you do not know how long the foods have been in the Temperature Danger Zone (40 and 140F), then they should be discarded for safety reasons.
However, if the temperature of the food was 40F or lower, they are likely safe, however the quality of the food could be affected due to the growth of spoilage bacteria or because the texture of the food has changed.
If you have any other questions, please let me know.
regards
Mark
